Simple Chili Con Carne
Recipe for about 6-8 servings

1Kg Minced Meat (Pork & Beef)
2 Onions
2 Chili Peppers
2-3 Garlic Cloves
3x Cans of Tomatoes
1x Can of Kidney Beans
2-3 Tsp Chili Powder
1 Tsp Cumin
1 Tsp Salt
1 Tsp Pepper
1 Tsp Cinnamon
1 Tsp Sugar
Some Olive Oil

The preparation of this very basic Chili Con Carne is quite simple, but it takes some time. You will need around two hours to prepare it.

Start by cutting the vegetables and remove the seeds of the chilis if necessary. However, if you like spicey and hot food like I do, you can also keep the seeds.

Now sweat the onions and chilies (With the seeds if you like) briefly in hot oil. Add the meat and fry it for a few minutes before you stir in the tomatoes as well as the garlic.

Season the chili and bring it to boil. Reduce the heat to low and let it simmer for around 60 minutes before you add the beans. Continue simmering for additional 30-60 minutes. If you like, you can also add some sweet corn to the chili along with the beans. But this is optional and totally up to you.

If the Chili Con Carne is still too watery after about 2 hours, and you prefer it a bit more "firm", just mix a bit of the liquid with some starch. Return this mixture to your chili and let it cook a few more minutes. The chili should get some more binding now :)
