Hokkaido Pumpkin Cookies
Autumn always means one thing for me. Many many pumpkins will be landing on my table over the next weeks. Usually, I use them for savory meals like soup, curry or simply filled pumpkin. But why not make some sweet pumpkin chocolate chip cookies with it? Well, I did it and they were super delicious. Here you have the recipe for about 30-35 cookies :)


400g Pumpkin Puree (You can find the recipe here on the website)
300g Flour
200g Oatmeal
150g Brown Sugar
150g White Sugar
125g Chocolate Chips
100g Butter (Room Temperature)
100g Cranberries
1 Egg
1 Tsp Baking powder
1 Tsp Salt
1 tsp Cinnamon
1 Packet of Vanilla Sugar


Take a bowl and mix in the flour, oatmeal, baking powder, salt and cinnamon as well as the vanilla sugar. Now take a second bowl and mix the butter with the sugar till it's creamy. Once that is done, add the egg and the pumpkin puree followed by the flour mixture, the chocolate chips and the cranberries.

Now you need a baking sheet with baking paper on it where you can put on the cookie dough. Form balls of the same size and spread them with some distance on the baking sheet. The cookies need to be baked for about 12-15 minutes at 175°C in the preheated oven and completely cooled down afterward.
