Lentil Stew
Today I have a "two in one" recipe for you. Depending on whether you use more or less broth you get a very delicious lentil pan with almost no liquid left or a very good lentil stew/soup. I can only recommend both :)

Ingredients for 3-4 persons

500g Potatoes
275g Carrots
250g Brown Lentils
225g Smoked Sausages
3 Garlic Cloves
2-3 Small Onions
1000ml Beef Stock (For the Lentil Pan)
1750ml beef broth (For the Lentil Stew)
50ml Vinegar
2 Tsp Salt
2 Tsp Pepper
2 Tsp Cumin
1 Tsp Sugar
1/2 Bunch of Parsley
Some Oil for frying


Preparation:

Start by roughly cutting the vegetables and the sausages. Especially the vegetables shouldn't be too small. Otherwise they might get overcooked in a later step.

Once this is done, heat the oil in a pan and sauté the carrots, onions and potatoes for a few minutes over high heat. Add the vinegar and let it vaporize completely, which may take a few minutes.

After the vinegar is vaporized, add the lentils, garlic, sausages and the beef broth. Now you have to decide whether you want a lens pan with little to no liquid or a hearty lentil stew. Depending on how you decide, you give more or less of the broth in the pot.

Bring everything to boil and then let the stew simmer for about 30 minutes on very low heat with a closed lid. After that, simply taste and season the stew.
