Gnocchi Casserole with Mushrooms and Spinach
As a request of a community member, I prepared a simple gnocchi casserole with mushrooms and spinach in a spicy pepper sauce for you today :)


Ingredients for 2 persons

500g Gnocchi
300g Mushrooms
200g Spinach
150g Mozzarella / Vegan "Cheese"
2 Onions
2-3 Cloves of Garlic
100ml Cream / Soy Cream
Sauce Thickener (Water and Starch mixed)
1 Tsp Salt
1 Tsp Paprika Powder
1/2 tsp Cayenne Pepper
Some Butter / Vegetable Oil


Preparation

First, heat some butter in a large pan and fry the gnocchi for about 10 minutes until they are golden brown.

Meanwhile, you can dice the vegetables and slice the mushrooms. When the gnocchi are golden brown, heat some oil in the pan and first fry the onions for 1-2 minutes over high heat, followed by the mushrooms and garlic.

As soon as the mushrooms "shrinks", you add the cream and maybe some sauce thickener. You can also add the spices at that moment. If the sauce has the desired firmness, add the spinach and leave it in the pan with the lid closed for about 5 minutes to "cook" it.

When you have done all of that, add the gnocchi to the sauce and put everything in a casserole dish. Now spread the cheese over the casserole and put it in the preheated oven for 15-20 minutes at about 180°C / 355°F.
