Microwave Meatloaf
Today we have reached the half-time in my little microwave recipe series and after the last two recipes which we can easily classify in the category breakfast, we will go straight to lunchtime with this delicious microwave meatloaf.

Ingredients for 2 servings

250g Mincemeat
60g Breadcrumbs
45g Tomato Sauce
10g Parsley (Chopped)
5g Basil (Chopped)
2 Garlic Cloves
1 Egg
1 Onion
2 Tsp Mustard
1 Tsp Salt & Pepper
1/2 Tsp Cumin
1/2 Tsp Chili Flakes


Start by dicing the onion and garlic very finely followed by mixing all the ingredients together in a bowl (Except the cheese).

Now you grease a small casserole dish with some butter or oil and put the mincemeat mixture in it. Form a meatloaf out of it and cover it with some wet kitchen paper so that the meatloaf won?t dry out in the microwave.

Once you've done that, put the casserole dish for 8 minutes at 700 watts in the microwave. Remove the kitchen paper and sprinkle the cheese on the meat. Return it to the microwave for additional 3-4 minutes. If your microwave has a grill function, you can also use it to melt the cheese even better and give it a nice color.
