Creamy Leek Soup
Today I have this delicious leek soup made with cream cheese for you. It's super easy to prepare and so tasty that it will be all gone in no time. Promise ;D
500g Mincemeat Mixed Beef & Pork / Alternative 500g Zucchini (For Vegetarians)
400g Cream Cheese
1.5 Liters of Vegetable Stock (You can find a recipe here on the website)
2-3 Leek Sticks
Salt & Pepper
Some Vegetable Oil
Start by cutting the onions as well as the leeks into small rings. When everything is sliced, heat the oil in a large saucepan and fry the onions for 1-2 minutes before you add the meat. Fry it on medium heat for about 5 minutes (the meat shouldn't be completely fried at that moment) before you add the sliced ?leeks as well as the vegetable broth.
Season the soup with salt, pepper and nutmeg. After you have brought the soup to boil, let it simmer for about 10 minutes at medium heat. Then stir in the cream cheese into the soup and let it simmer for additional 10-15 minutes at same temperature. Taste the cooked soup again and season it some more if necessary.
For the vegetarian version of this recipe, you simply replace the meat with about 500g zucchini. Cuts it into thin slices and handle them just like the meat. Fry them with the onions and add the leeks as well as the the broth.
