Fried Potato Salad
Homemade potato salad with crispy fried potatoes is a great recipe if you need to prepare something very fast. Since I love this dish so much, today I'll show you how to make it by yourself at home without much effort :D

Ingredients for 2 servings

2-3 medium sized Potatoes
2 large Gherkins
2 Shallots
1/2 Chinese Cabbage
1/2 Bunch of Radishes
Salt and Pepper
Vegetable Oil (For frying the potatoes)

For the Dressing

3 Tbsp Olive Oil
1-2 Tbsp Vinegar (Use only a few and taste it first. Too much vinegar would make the salad inedible)


You can easily make this potato salad yourself. Start by cutting all the vegetables followed by heating the vegetable oil in the pan. Fry the potatoes till they are golden brown and crispy.

While to potatoes are frying, mix the dressing together with the remaining ingredients in a salad bowl. Taste the salad with some salt and pepper and serve it on a plate. Add the fried potatoes on the salad and your simple but delicious potato salad is ready to serve.

Just keep in mind that you should never mix the potatoes with the salad in the salad bowl, as the potatoes soften due to the liquid and are therefore no longer crispy.
