Spicy Coconut Pumpkin Soup
Today I have a very simple recipe for a delicious spicy pumpkin soup for you, which will cause a true taste explosion in your mouth. Due to the different ingredients, the soup has an interesting sweet, sour and a spicy taste. It's fast and easy to prepare and also good for all vegetarians and vegans out there :D


800g Hokkaido Pumpkin
25g Ginger
1000ml Vegetable Stock
400ml Coconut Milk
250ml Orange Juice
2 Onions
2 Hot Peppers
2 Tbsp Lime Juice
2 Tsp Curry Powder
Salt & Pepper
Rice (Optional)
2-3 Tbsp Vegetable Oil


Start by chopping the vegetables and fry them in a pot with hot oil for about 2-3 minutes (All vegetables except the pumpkin). You should also season them a bit while they are frying. Now add the pumpkin as well as the orange juice and the vegetable stock. Bring it to boil once and let the vegetables simmer for about 30 minutes at low to medium heat.

As soon as the pumpkin is soft, you need a hand mixer to blend all the vegetables in the soup. After that, add the lime juice and the coconut milk and taste everything again. If necessary season the soup one more time.

Service the soup like that or with some rice. Both is very delicious :)
