Indian Style Chicken Curry
The other day I asked a coworker what I should cook in the evening and he gave me this recipe for an Indian style curry. Since I have never eaten real Indian curry, I really wanted to try it out. And what should I say. It was amazing and simply delicious. And if you are vegetarian or vegan, you can of course leave the meat out of the recipe. But then you should use a bit more of the vegetables :D


Ingredients for 3-4 servings

500g Chicken
150g Cashews (Chopped)
150g Yoghurt or Soy Yoghurt
50g Butter or Margarine
50g Tomato Paste
500ml Coconut Milk
2 Carrots
1 Bell Pepper
1 Big Onion
2 Coves of Garlic
2 Tsp Curry Powder
2 Tsp Curry Paste
2 Tsp Masala seasoning
1 Tsp Salt & Pepper
1 Tsp Sugar


Preparation

Start by roughly cutting the vegetables and meat. Add some vegetable oil to a pan and fry the onions in high heat for 1-2 minutes. Once that's done, add the garlic, curry paste and tomato paste and mix everything together, followed by adding the coconut milk, the seasonings, the vegetables and the meat. Allow the curry to simmer for about 20-25 minutes over low heat and with the pot lid closed.

Once the curry is cooked, add the butter, yogurt, and chopped nuts. Taste the curry again and season it some more if necessary. Then the curry is already done and ready to get served. Of course it goes well with some rice or a fresh baked Naan bread :)
