Hokkaido Pumpkin Soup
Autumn often means bad, cold and rainy weather. To make this season of the year a bit more pleasant I will show you a simple recipe for a delicious soup out of Hokkaido Pumpkin. Butternuts are also perfectly fine for this soup :)


Ingredients

1500g Hokkaido Pumpkin
1500ml Vegetable Stock
100-150g Walnuts
2 Onions
1/2 Bunch of Parsley (Chopped)
1/2 Nutmeg
Salt
Pepper
Olive Oil
Rice


Preparation

Start by roughly chopping the nuts and the onions followed by removing the seeds of the pumpkin and dicing it.

Heat the oil in a large saucepan and simmer the onions briefly before adding the pumpkin and vegetable broth as well as the salt, pepper and nutmeg. Cook the pumpkin soup for about 30 minutes at medium heat till it's soft.

Now you need a hand mixer for blending the pumpkin in the soup. Once you have done that, add the nuts and parsley. Let the soup simmer for a few more minutes and season it again if necessary.

While the soup is simmering you can prepare the rice and serve it together with the soup :)
