1 Tortilla
100g Mushrooms
100g Spinach
80g Mozzarella
1/2 red Onion
2 Tbsp chopped Parsley
2 Garlic CLoves
1 Egg
Some Butter
Some Olive Oil
Salt & Pepper
Optional: Sour Cream as Dip


For this version of a quesadilla, you should start by cutting the vegetables. Then heat the butter in a pan and fry the onions, mushrooms and garlic for 2-3 minutes. Once you have done that, add the spinach followed by the whisked egg. Now mix in the parsley and season everything with salt and pepper.

Put some cheese on your quesadilla followed by the mushroom spinach mix. Sprinkle some more cheese on top and fold the quesadilla. Now it's time to fry it in some oil. The first site takes about 5 minutes on medium heat, whereas the second site only needs 30-60 seconds. However, you should still put some oil on the second site before you turn it.

Take the fried quesadilla out of the pan and let it rest for 1-2 minutes. Serve it immediately after so it's still warm and crunchy :)
