Chili Cheese Nachos
Today I have a small additional recipe for my Chili Con Carne, which I made a few months ago. The preparation is almost the same, only that we add delicious Nachos and cheese at the end. Definitely a super snack for me and my friends. Especially with the upcoming Super Bowl this Sunday :)

I took the amount of ingredients from the original recipe. Of course, you don't have to use all of the Chili Con Carne to make the Chili Cheese Fries. For example, I like to freeze a part of the chili so I don't have to cook it all over again every time I want to eat Chili Cheese Fries :D

Ingredients for about 5 people (If you have to cook the chili con carne. Otherwise around 250g Chili Con Carne per serving)

1kg Minced Meat
2 Onions
2-3 Chili Peppers
2-3 Garlic Cloves
3 Cans Tomatoes
1 Can Red Beans
Nachos
Mozzarella (more or less depending on your preference)
2-3 Tsp Chilli Powder
1 Tsp Cumin (Ground)
1 Tsp Salt
1 Tsp Pepper
1 Tsp Cinnamon
1 Tsp Sugar
Some Olive Oil

Preparation

The preparation of the Chili Cheese Nachos is as mentioned above almost identical to the Chili Con Carne and is therefore quite simple.

First cut the vegetables and if necessary, remove the seeds of the chili peppers. However, if you like spicy food like I do, you can of course also pick it up and add it to the chili.

Now sweat the onions and chili peppers (if you like the semen) in hot oil for a short time and then add the meat. Once this is almost done, stir in the tomatoes and garlic and season the chili.

Now let it boil briefly before you reduce the heat to a low level. The chili should now simmer for a good 60 minutes before adding the drained beans and simmering the chili for another 30-60 minutes. If you like, you can also add corn to the chili with the beans. But that's optional and a matter of taste.

If the Chili Con Carne is still too watery after about 2 hours and you want something "firmer", just scoop off some of the liquid and stir well with some of the starches. Then stir this mixture back into the chili and cook it for a few more minutes. The chili should then get a little more binding.

When you have done that, you can put the Nachos on a plate and add the Chili Con Carne, the cheese and of course some more chili peppers or jalapenos. Put everything in the oven untill the cheese is melted. Serve and enjoy immediately :)
