How to cook Asparagus

1000g Asparagus (White or Green)
1500ml Water
25g Butter
1/2 Lemon (Sliced)
2-3 Tbsp Sugar
2-3 Tbsp Salt


First you need to wash the asparagus, followed by peeling it. Simply use a vegetable peeler and start peeling from about 1 cm below the head followed by removing 1-2 cm of the wooden end. If you are using green asparagus instead of white one, don't peel it from the top like the white ones. Here you just need to peel the lower third. That is the only difference between green and white asparagus. The next step is the same for both versions.

Take a large pot and put sugar, salt, butter, lemon, the skin and the wooden ends of the asparagus in it. Fill it with water and bring it to boil. Let it cook on low heat for 20 minutes.

After that, you need a second pot to sieve the just cooked stock. Bring the clear stock to boil again and add the asparagus which needs to cook for about 8-15 minutes, depending on the thickness.
